Buffalo Chicken Potato Skins Recipe


This is a great meal to eat for Iftar. Of course, if you are like me it won't take much to make you full. The idea behind Iftar is to eat something healthy that will tie you over until you have your Sehri. This can be eaten alone or with a salad. 
Buffalo Chicken Potato Skins

Ingredients

4 medium baking Potatoes
Oil for brushing
2 cups cooked Chicken, shredded or dIced
1/2 cup hot sauce
2 tablespoons Butter, melted
Salt and pepper to taste
1/2 cup Cheddar cheese
1/2 cup Mozzarella cheese
2 green Onions, sliced

1. Prick the potatoes a few times with a fork and bake in a preheated 400F oven until tender, about an hour.
2. Let the potatoes cool, cut in half and scoop out the middle leaving about 1/8 inch of potato on the skin. Reserve the scooped out potato for another use like mashed potatoes.
3. Brush the potato skins all over with the oil and bake in a preheated 450F over for 10 minutes on each side.
4. Mix the hot sauce and the melted butter and then mix in the chicken.
5. Season the inside of the potato skins with salt and pepper, fill with the chicken and sprinkle on the cheeses.
6. Boil until the cheese has melted, just a few minutes.
7. Serve while still warm, garnished with green onions and chilli sauce for dipping.

Skinny Buffalo Chicken Dip







All the flavor of buffalo wings without messy hands! Perfect for your Superbowl Party. I lightened this using low-fat and fat-free ingredients. Adjust the heat to your liking and serve this with celery, chips or crackers.



Ingredients:

  • 4 oz reduced fat cream cheese, softened
  • 1 cup fat-free sour cream
  • 1/2 cup Frank's hot sauce (or whatever hot sauce you like)
  • 1/2 cup crumbled blue cheese
  • 1 tsp white wine vinegar
  • 2 cups (14 oz  raw) cooked shredded chicken

Directions:

Mix the first 5 ingredients together until smooth. Add the chicken and put this in the crock pot on low for 3-4 hours. Serve warm.

To do this on the stove, simmer on low heat 30 minutes.

Baked Buffalo Wings

Everyone loves chicken wings and everyone loves Buffalo Wings. To me, this is the best way to make Buffalo Wings plus its a lot healthier. Instead of frying the chicken wings first it is completely cooked in the oven. It also has less sodium as well. You can always add more red pepper sauce to suit your needs of how hot you want it to be. Buffalo wings can be served with either Ranch Dressing or Blue Cheese Dressing. I like to eat mine just the way it is.

Ingredients

2 lb chicken wing drummettes (about 24)
2 tablespoons honey
2 tablespoons ketchup
2 tablespoons red pepper sauce
1 tablespoon Worcestershire sauce
Paprika
Celery sticks, if desired


Directions

1. Heat oven to 350°F. Line 15x10x1-inch pan with foil. Remove skin from chicken.
2. In resealable food-storage plastic bag, mix honey, ketchup, pepper sauce and Worcestershire sauce. Add chicken. Seal bag; refrigerate at least 15 minutes but no longer than 24 hours, turning occasionally.
3. Place chicken in pan; sprinkle with paprika. Bake uncovered about 30 minutes or until crisp and juice of chicken is no longer pink when centers of thickest pieces are cut.
